Collard Green Recipes

Here are some new Collard Green Recipes

1 T vegetable oil
1 small onion, cut into 1/2 inch pieces
4 cloves garlic, coarsely chopped
1/4 pound cooked ham, cut into 1/4 inch pieces
4 cups chopped, steamed collard greens, drained
2 cups cooked rice - white or brown
1 can [15 ounces] chopped tomatoes, drained and liquid reserved
1 large egg, lightly beaten
3/4 cup grated reduced-fat cheddar cheese
2 T hot red pepper sauce

Preheat oven to 350 degrees F. Coat 2 quart covered casserole dish with nonstick cooking spray.

Prepare, cut and steam collards. Prepare rice.

Heat oil in medium nonstick skillet over medium heat. Add onion and garlic. Saute until softened, about 5 minutes. Add ham and collards. Saute 2 minutes. Transfer to large bowl.

Add rice, tomatoes with 3/4 cup reserved juice [or enough water to make 3/4 cup liquid], egg, 1/2 cup of the cheddar cheese, and hot sauce to collard mixture. Stir to combine. Transfer to casserole dish, spreading evenly. Top with remaining 1/4 cup cheddar cheese.

Bake, covered, 40 minutes. Let stand 5 minutes before serving.

Thought I would share some yummy recipes with you.

The first recipe is Veggie Collard Greens (no ham hocks or bacon). I doubled the recipe since I had two bunches of collards, and it calls for 8 cloves of garlic but all I had on hand were 3. Normally I add lots more garlic than a recipe calls for, but this turned out well with only 3. I also halved the salt (I'm not a big fan of salt). I used our green peppers instead of the red.
