Creamed Mustard Greens
A recipe for those of you who don't really like Mustard Greens
If Mustard is not your favorite, but you know you should eat them because of their health benefits, here is a recipe that will work for you!
Wash and destem the Mustard Greens. In a pot of boiling water, submerge the greens for about 4 to 5 minutes until they are fully wilted but not completely tender. Drain and cut them up a little if you like (I prefer to cut them).
The Cream Sauce:
2 Tbs. Butter
Melt the butter in the oil and add the flour. You want this paste to be very thick, if not a little clumpy. Slowly pour the cream into the flour mixture stirring constantly until thick and creamy. Add salt and pepper and cream cheese, stirring until cream cheese is melted and the cream sause is thick and creamy.
Meanwhile, suatee 1 large onion, chopped, and 4 to 5 cloves pressed garlic in butter or olive oil until the onion is clear. Add to cream sauce.
Add Mustard greens and mix well. If you like, add Parmesan Cheese.
1 Bunch of Mustard Greens should serve about 4 adults
