Ham and Eggplant Casserole

Note: This is a very flexible recipe!

Eggplant - the little ones; no need to peel.
Green peppers
Tomatoes or tomato sauce or spaghetti sauce or diced canned tomatoes
Yellow squash
Ham - Black Forest type is awesome
White cheese; our favorite is smoked Gouda
Fresh greens
Anything else you want to put in


Chop all the ingredients up into approx. 3/4" cubes or slices. Put in greased glass baking dish, cover and bake at 350 for 30 minutes, uncover and bake another 5-10 minutes. Serve over couscous or quinoa or rice.
