Mesclun Salad

The contents of Mesclun mix will vary. It often contains leaves such as baby spinach, curly endive, dandelion, lamb's lettuce, mizuna, purslane, red chicory, red oak leaf lettuce, rocket, baby spinach, baby leaf lettuces and romaine. Generally, it will be a balance of sweet and bitter greens. Ambrose Farm’s mix contains Chicory, endive, arugala and red & green leaf lettuce. With this mixture, you will get some mild, tart, peppery tastes all combined into one very healthy combination.

Mesclun Mix

Chicory is a type of endive, very closely related to the dandelion plant. It is high in calcium, dieteary fiber, manganese, magnesium, Vitamins A,C,B6 and Zinc. It is also a good source of Thiamin, Niacin, Vitamin E , Vitamin K, Riboflavin, Folate, Pantothenic Acid, Calcium, Iron, Phosphorus, and Copper.

Endive is a vegetable that looks very much like lettuce, except that it is curly. It is very beneficial to our optic system. It is an excellent source of vitamin A. It is also a good source of vitamin C,calcium,iron, phosphorus, potassium, sulphur; and excellent provider of fiber and carotene.

Arugala is an herb belonging to the mustard family.It is very high in vitamins A & C, and a good source of folate, calcium and magnesium. It is a spicy leaf sometimes described as bitter or having a peppery or mustard flavor. Many people like it mixed into a green mixture rather than alone because of it’s spice.

Red & Green Leaf Lettuce provide the mildness in this mesclun mix. The red leaf lettuce provides small amounts of antioxidants such as beta-carotene & lutein with it’s red color along with vitamins A & K. The green leaf lettuce provides vitamins A & C and a small amount of calcium.

Storage and Handling Wash all greens thoroughly to remove any sand. Spin dry in a salad spinner or pat dry with a towel. Store in a perforated plastic bag in the refrigerator with a slightly damp paper towel.
