More Greens! Crustless Quiche

3 bunches any type of green or braising mix
1 lb favorite bulk sausage
1 large onion
cheese (maybe 1 cup of whatever you have on hand, but those fresh mozzarella balls are might fine with a shake of parmesan)
6 eggs
1/2 cup milk

Instructions: Chop and wash 3 bunches of any type greens you have in the fringe (oldest first! - - turnip, beet, kale, collards . . .). Brown sausage in a skillet. Add sliced onion and cook until transparent. Add greens, a skillet-full at a time. When wilted, add the next batch. Cook out most of the moisture.

Spray a pie plate with cooking spray. Put 1/2 of the mixture into the bottom of the pie plate (with none of the cooking juice). Cover with cheese. Pour in egg. Place in a 350 degree oven for 30 minutes or until set (stick a knife in the middle to be sure).

You could add some chick peas to the rest of the sausage and green mixture and then toss the rest with pasta or turn into a soup.
