Squash Potatoes
CSA Member Rebecca Peters recipe.
You Will need:
4 small winter squash
1 tablespoon butter
1/4 t white pepper
salt to taste
Instructions:
Have your husband peel and cut 4 cups squash into 1 to 2 inch cubes. Steam for 20 minutes until soft (test with a fork). Put squash in a bowl with butter, white pepper, and salt. Mash with a potato masher until smooth.
You can substitute black pepper, but white pepper is what they use in mashed potatoes in restaurants - so your brain kind of likes the mashed with the white pepper.
